happy about its success.

One of the best brews that I made was my 1 all grain ... I thought that

it would be a disaster but actually came out quite good.

I usually drink darker beers like guiness or a porter ... but my

favorite store bought beer would have to be la-trappe trapist ale or

maybe some of the bottled belgian alse that you can buy in the store.

I'm from the Elyria, Ohio in the USA.

I started brewing mead about 21/2 years ago because I had an acquaintance

let me try some mead he had made. Frankly it was dry as a bone and tasted

something like rocket fuel, but it sparked my interest. My intersts have

gone on to include mead, cider, wine and finally beer. In the last year I

have brewed more beer than anything else because I don't have to wait 6

months to a year to enjoy my products.

I am about to make the jump to all-grain brewing as soon as I use up all the

extract that I have on hand. I got a real good deal from a homebrew store

that was closing it's doors, and I ended up with 30 kilos of M&F extra light

LME, 12# of light DME and a bunch hops and specialty grains (crystal,

carapils, munich...). I was sorting through the junk today and I am trying

to figure out how I am going to use up 12# of medium crystal malt and 11# of

Wheat Malt. Sounds like I should buy a pound of Hallertaur and a pound of

Tettnang and make wiezenbach!

I have been making mostly ales as that I don't have any way to cool my

fermenters low enough to lager, but since I love brown ales and mild ales,

in the british style more than the american style, it hasn't been problem.

I'm married, with 3 kids, 1 of which is 23 this year. The other 2 are ages 6

and 11/2. My wife works as a manager for a large insurance company. I was a

computer technician and network engineer until last year when my 6 year old

son started school. At that point, I told my boss goodby, and took over

careing for the kids and keeping house full time. This also gives me time to

surf the internet and the web and time to make the wonderful brews that all

my friends love to drink up too fast. (except when I make something I like

way too much) :^).

I started brewing a year ago by accident. I work for US

Department of Agriculture, Natural Resources Conservation

Service as a soil scientist. Last year I was send to UC

Davis for a month to study soils and came back with some

knowledge on making wine and beer. Oops.

I have brewed pale ales, fruit ales, stout, Wiessbeir,

Scottish Ales, and lagers. I am making partial mash beers

currently and slowly getting the full mash equipment. Hopefully

by the end of September I will have it all up and running.

The part of the profile is to tell a little about myself. To

make a long story very short I have too many hobbies: hunting,

shooting, kite flying, music, gardening (including hops),

Me - I come in on the high side of the age spectrum - age 54. But age

does not necessarily mean experience - at least with brewing as I have

been at it for only about a year. But it has become an obsession (my

wife suggests that all my hobbies start out as obsessions but peter out

at about the $1000 level). If my wife is right I am at that $$ level

now but I want to keep at it (maybe $2000 is the level for the Y2K).

For most of you young folks, I have a double disability: I am a retired

Army Officer and also a lawyer. I know this is a burden to bear but I

hope you can have some tolerance for a guy drafted into service during

Vietnam.

I have just started all-grain (I posted my first such experience

recently). I am going to back off for a bit and perfect my partial-mash

techniques in hopes of a better second try with all-grain in a couple of

months. My problem is that now that I am kegging my beers I don't have

enough drinkers - I must get that counter-pressure filler to bottle this

stuff so I can give it away.

I work as litigation manager for complex claims for a national auto

insurance company. I live in Severn, MD, which about mid-way 'tween

D.C. and Baltimore. My wife of 33 years and I live with our two dogs.

I am a very serious University of Arizona (double alum) sports fan.

Favorite commercial brands (just a few): Young's Rams Head Bitter, Wild

Goose Summer Wheat, Baltimore Brewing's Maibock, Anchor Steam (on draft

only when I am on the West coast).

4. I have to brew a light colored/bodied Apricot Wheat for my wife every

now and then, and then she puts up with my brewing. I also make sure to

leave the kitchen as clean as I found it.

Occupation : Writer/Producer of television & radio commercials, corporate

videos, and writer of print materials and web site content.

Favorite Brews : Not a lot of choice in this small Midwestern town. I

chase down a Sierra Nevada Pale Ale whenever I can. I like all the beers

from Boulevard Brewing in Kansas City, which are available here. Just

discovered a nice little microbrewery in Deadwood, South Dakota called

Black Hills Brewing which is putting out some fabulous German-style beers.

Their Altbier is excellent, and they do a Weisse which is very true to

style. But their distribution is limited (I have to drive about an hour to

get to a town that carries it). I tend to like beers with a lot of flavor

and plenty of hops.

Methods : Extract with the adding/steeping of specialty grains. I rarely

use liquid extract; prefer to start with light DME and steep various

crushed grains for color/flavor to style. Just did my 1st attempt at a

true Hefeweizen in which I did use Ireks liquid DME, because it was a

German 100% wheat malt. My "signature" beer is an Apricot Cream Ale my

friends and relatives go crazy for. Personally, I'd like to brew a Porter

or Stout just about every batch! I may move to all-grain in the distant

future when the kids are out of the house (16 years from now) and I have

more time on my hands. I give them and work most of my time. I don't mess

with brewing until 8 or 9 at night after they're off to bed.

Brewing Experience : A little over a year. 25 5-gallon batches under my belt.

Interests : In order of preference: Nebraska Football, Brewing,

Music/seeing live bands (blues, blues/rock, guitar-based rock, some

"alternative" type bands-- I'll be in Minneapolis Sept. 22 to see one of my

favs, The Tragically Hip), Macintosh computers, fixing things around the

house, building stuff, agriculture (grew up on a farm in Nebraska). Maybe

I should consider going back to farming and grow barley, hops and wheat!

I've been brewing for about 4 months now and just brewed batch #6 this

weekend (pale ale). I'm currently doing extract brews with specialty grains

and liquid yeasts. I refuse to move to all-grain until I perfect my extract

brews. My brewing system started out with a 20qt stainless pot on my stove,

all plastic buckets, and ice bath in the sink for cooling. My current setup

is a 10 gallon polarware pot, Cajun Cooker outdoor propane stove,

MAXIchiller counterflow chiller, a million different gadgets (I love

gadgets), and 1/2" hosing running every which direction (I don't have a

water spigot outside). The major limiting factor in my setup is space. I

live in an apartment so my system has to break down and store easily in a

small closet so I think I will hold off on my dream 3 tier all-grain system.

I'm sorry to say that I have yet to produce a really good brew. Only 1 batch

so far has been really drinkable except that it staled within 2 weeks after

bottling. I have had a couple of brew shops taste my beers and they both say

my number one problem is oxidation (and couple brews might have had a slight

wild yeast infection). In my latest batch I took every precaution possible

to avoid hot side aeration so I will find out if oxidation really is my

problem. Every one of my brews have been with completely different

ingredients, and yeasts and all of them have had the SAME bad aftertaste and

aroma. If my current batch has the same characteristics I'm going to do some

simple lab tests (from Brewing Techniques mag) and try to determine my

problem.

My favorite commercial beers are Guinness, GB Marzen, and Pyramid Wheat.

When I'm not working or brewing I can be found at the local rock climbing

crags (castle rock, pinnacles, mickey's beach, planet granite). I'm a

die-hard rock climber (sport climbing) and spend 6-10 hours a week climbing.

For any other climbers out there, my highest onsight (leading) is 5.11b and

recently completed a v4/v5 bouldering problem. In the past 4 months I have

started SCUBA diving and have currently received my advanced certification

(w/ PADI) and begin Rescue diving in September. I plan to get my Dive Master

certification sometime next year.

Brewing history:

I wanna kill the friend who got me into this. I mean, it's a really

great hobby and all, but it makes a body obsess, don't it?

I've been brewing for about five years. Still doing partial mashes,

although I've had the opportunity to participate in making many

all-grain batches. In the beginning, I obsessed about the finer

details of brewing. I wrote everything down. I created charts

and spreadsheets to calculate starch conversion and hop utilization.

I cultured yeast for EVERY BATCH. And my beer was good. Some

of it pretty damn good.

But after a while I decided (a healthy decision, I think) that I

was never gonna be a professional brewer, that I was never gonna

open a brewpub or even a homebrew supply store. I realized that

I make some very good beer using dry yeast (hey, Mr. Henry, could

you send some of that Coopers my way, por favor?) and extracts.

I realized I valued time with my family more than time brewing.

While I don't adhere to the Papazianesque attitude of "Don't

worry, get drunk, make homebrew", I *have* decided to stress less.

It's just a hobby, after all. And hobbies are supposed to be fun,

right? Right?!

Name is Graham Smith at 42 years old, brewing in Derbyshire, England. I

work shifts in a power station.

I've been brewing for about 12 years now, starting with kits then quickly

graduating to extract and full mash. One of my first brews leaked out of

the fermenter into the hall below overnight as I managed to find a nail

stuck up through the floorboards in the cupboard.

I mainly brew UK style beer - bitters, pales, milds, porters, stouts etc.

Can't stand lambic type beers as I can make them easily by just opening a

keg in the house and letting in some lactic type bacteria.

Why do I brew? Because it's almost 'something for nothing', not

financially but in the sense that a pile of ordinary looking ingredients

are turned into a living, complex liquid which gives people enourmous

pleasure. Same sort of feeling as finding picking wild mushrooms - so

satisfying.

I'd love to own a small commercial brewery cum pub, but couldn't be doing

with the punters so will stick with brewing. Fermenters and coppers don't

answer back - just bite occasionally when hot:-(

My all time favourite beer is Burton Ale brewed by Ind Coope who are no

more, now part of the Bass empire, but under threat. A recent addition to

my top ten favourites was Hop Pit 12th made with nothing but lager malt

and Centennial hops with Bass yeast at Bass Museum Brewery.

Really learned a lot at the BOP; I would highly recommend it if you have the

chance. I also started kegging in the last year. It could be just another

took first place in thier categories at the 1998 Sothern California Home

I've been brewing since December, just bottled my fourth extract batch.

I've done an Irish Red Ale, Nut Brown Ale, Honey Wheat and Raspberry Ale.

No fancy names for each batch, but they're all bottled under the DewBrew

label. The first three were recipes from the homebrew store I frequent. I'm

excited about the raspberry ale, since I concocted my own recipe from a

number of sources, including input from the participants on this list. It

tasted good coming out of the secondary... now time will tell...

I got into homebrewing because I like beer, and I like doing things that

are a little out of the mainstream (Such as making an aquarium out of a Mac

Plus computer). My wife agreed to buy the equipment I needed for me for

Christmas last year, and I've been enjoying it ever since. Each batch has

come out pretty good, and I'm looking forward to getting better. I also

like gadgets, and this is a great hobby for that. I recently built my own

wort chiller and bottle washer, and am keeping my eye out for other things

that will make my brewing easier/better.

I've enjoyed this list and the feedback I've gotten. I'll be taking a short

(hopefully short!) hiatus on brewing, since my wife gave birth to twins on

Monday (Let the sleep deprivation experiment begin!) (Sorry, I have to plug

My name is Douglas Evans. I go by Doug,or Dovans. Also known as VinBrew on

the chat channel. 6 months ago I opened a Homebrew store in Central Ohio.

(Well pretty close to being central) My knowlege of homebrewing is limited.

I am more known for the fine wines that I can produce, and teach others to

produce. Due to the absence of a local homebrew store to support my wine

hobby is why I opened one. Due to the fact that I need to sell beer

supply's, I am learning about the fine art. One that I wished I did along

time ago.(Although there is nothing wrong with a fine glass of wine) I also

work part time at a local vineyard at no Pay<G>(But I get grapes! Anyone

interested in fresh grapes<G>) What I've learned from the guy who runs the

winery is pay enough. My Advice to any Newbie is to just do it. Throw the

damn book away. They can be so misleading and frighting. If your making

wine, my advice is to learn correctly, the use of the hydrometer. It will

make all the difference in the world. My other interests include Bluegrass

Music. In which I partake by abusing an old Martin guitar. I also have two

kids and of course Im married. There is also a Black Lab in the family and

some Stray cats, which were dumped in my drive. Before the Homebrew store,

I have been homebrewing since our honeymoon, if you discount the 'pour and

stir' brewing I did while at university. We went to New Zealand for our

honeymoon, and I was impressed by some of the beers I had over there.

Since then I have been a real beer enthusiast, and have gone right in to

all-grain brewing, partly because quality unhopped malt extracts are not

readily available here. My best beer to date has been a so-called mild,

the recipe of which I adapted from the Brewer's Workshop package (which

means it was somebody's competition winner once upon a time).

I have not entered any competitions, nor do I plan to, as I brew for myself

and Anne, and I couldn't bear giving the good stuff away!

brewing: a little over a year now, but I brew a *LOT*, exactly the legal limit,

I suppose (yeah, that's it) just doing extracts with steeping grains. I'm not

ready to go all-grain any time soon, I just have an electric stove and no spare

get better control of my beers and cut costs. Before I started this, I got to

play helper/sidekick to a neighbor who brews, and I swear it's the best way to

get into brewing, just so you can get a feel for it before you blow a bunch of

buy any at the stores, since my own stuff comes out to less than 50 cents a

I have homebrewed since I was 10 much to my Mums disapproval and my Dads

encouragement(My Uncle gave us a load of kits he couldn't sell).

I started a HB shop more than 15 years ago when I was pensioned off from my

job in Local Government due to a rather serious road accident.

I've always been rather vocal in my support of the independant retailer and

at one time was Chairman of the UK Trade Association.

My knowledge of brewing is always expanding and I'm always eager to learn

new things.

I'm also a rather keen cook,but can't make coffee.

I started Evergreen Brewing Supply in Belllevue Washington 6 years ago (moved

here from Portland and I knew more about brewing than the guys in the local

shops). Two years ago Simon & Schuster published a beginning book on

homebrewing I wrote (comes with all the stuff for making 1 gallon of beer,

sold 17,000 copies before it went out of print). A year ago I started an

import company and am now the North American importer and promoter of Coopers

homebrewing products (if you want a free sample of yeast let me know. I have

about 10,000 sachets of 15 gram yeast that is too close to the expiration date

for me to feel good about selling. Expires 2/30/99, by the way, so its still

good).

I just turned 39, and in my previous life I've worked for the NSA and Philip

Morris. All in all I find beer making better for the soul. My wife tolerates

my hobby, as long as I make an occasional semi-sweet Muscat for her. My 5

year old loves to help. My favorite style of beer is British Special Bitter

and German Dunkle. I aspire to win a Best -of-Show in some competition, any

competition (always the bridesmaid, never the bride). I sstarted brewing 15

years ago when I and my college roommates first tried the original Redhook

beer. That night over way too many beers we decided to drop out of college

and start a brewery in Portland. And since someone had to know how to make

beer (and I was the "liberal arts major" of bunch and deemed least useful in

the business sense), I started homebrewing. Of course, we never dropped out

of college. And we never started a brewery in Portland (SOB!).

My advice to brewers is demand to be shown how to make beer every bit as good,

if not better, than what you can buy. If it is not coming out that way,

review the advice you are being given.

Why: I love beer and the cost of commercial beer was excessive. I wasn't

really looking for a hobby but it's turned into sort of one.

What style of brewing?: I brew extracts and kits. I don't really have the

patience or time to move up to all-grain and haven't invested in the

necessary equipment. I do plan to purchase a larger brewpot and make an

immersion cooler but that's probably it for now.

A little about yourself: I was born and raised in Halifax, Nova Scotia.

Moved to Montreal, Quebec when I was 12 and then to Newfoundland when I was

20. Have lived in Nfld. since except for 2 years away at grad school.

I watch and play sports as much as possible. I played soccer indoors twice a

week during our long winters and have coached soccer for over 10 years.

I was involved in running for several years until tendonitis and kidney

stones discouraged further activity. Ran several marathons with a best time

of 2:56 and frequent 10k's with a best time of 37 minutes.

I am employed by Transport Canada and have worked as an economic analyst for

most of the time (with Fisheries & Oceans Canada and Transport Canada). At

the moment I am the Acting Regional Director, Coordination for Transport

Hi all,

I have reached the age of 46 drinking gravity fed spring water near Deposit,

NY. Grew up on a dairy farm, former farmer, logging contractor, excavation

contractor. Currently employed by New York State Department of Transportation

in highway maintenance (I plow roads in the winter, pick up other peoples

trash in the summer).

Currently brewing in a 5 gallon setup outside using that very same spring

water. All stainless with open primary (converted farm stuff). Primary happens

in the cellar at the farm house (68°). Secondary in soda kegs and served from

keg. No more siphoning! Have done a couple all grain brews. Working on moving

up to a larger system.

I prefer pale ales, porter, and stout. A former member of the Borderline Yeast

Infectors (Binghamton, NY) where I edited the newsletter for a couple years.

German ancestry (it seemed the natural thing for a German-American to

bottle. She is very happy with the kegging system now because we only have

to bottle half a batch now.

I have a 10 year old son from a previous marriage. He loves to help brew

while he is here. I also have 2 dogs 1 Rhodesian Ridgeback mix, and a

Sheltie.

I currently brew with all grain and extract just depends on how much time I

have. I have only been brewing about a year but I have at least 20 batches

of beer under my belt 4 of which are all grain. My neighbors love me because

of all the free beer they get to drink since I can't drink all that I brew.

I have read numerous books on brewing and I consider myself further along

then most new homebrewers. I have quite a setup now and continue to add

every month. I have slowed down somewhat in the last couple of months due to

a surplus in beer. I am down to about 1-2 batches a month instead of 3-4.
